Our final cooking class of the year centered on holiday classics vegan style. Chef Kevin Archer was back along with our own Vice President and cooking genius Monika Soria Caruso. The demonstration included cornbread stuffing, cranberry compote, sage and rosemary soubsie, a phyllo dough beggars purse stuffed with tempeh, and pecan pie. A full meal was served at the conclusion of the class, and we also raffled off raw pumpkin tarts made by Monika, a bath and body set from a local vegan company Shorganics, and several vegan cook books including Chloe’s Vegan Italian Kitchen.
