Our very first cooking class was given by friend and Certified Vegan Chef Kevin Archer. The three hour class focused on techniques for bringing out flavor in vegan cooking, and participants were encouraged to smell, taste and touch food items throughout. The Refuge’s own Board Vice President Monika Caruso assisted Kevin in the creation of an array of delicious dishes including blackened tempeh, roasted mashed potatoes and dirty quinoa. A crew of dedicated volunteers helped behind the scenes and made the event run smoothly. Whole Foods donated produce for the event, and we held a fabulous raffle which included local tempeh from Tempeh Girl!
